Acacia honey remains liquid for a long time. It may become cloudy due to the formation of crystals, but it never crystallizes completely. The colour varies from almost colourless to straw yellow. The smell is not particularly characteristic.The aroma is not particularly characteristic, but is nevertheless delicate, often vanilla and sugar syrup. Acacia honey is also referred to as anti-inflammatory for throat and stomach acidity. Pairing recommended with pecorino cheese seasoned under pepper or juniper berries.
