Sheep’s cheese preserved in hay

Produced with sheep’s milk, this cheese is refined in natural hay. It has indeed very intense herbal notes and it’s so tasty. It has a medium-strong taste and matches well with a red wine with the same characteristics. This preservation process which has now become a refining process was one of the ways used in the past to preserve cheese for a longer period.
